The "Kniedla", how they are called in Franconia, are one of the most typical foods in Franconia.
They consist of different parts of raw or cooked potatoes, a little bit of flour and potato starch. For the stuffing roasted cubes of white bread, the so called "Broeckala", are used.
Potato dumplings need the full skill of the cook. Their making, according to the quantity, may take up to a complete forenoon
"Having dumplings on the table i do not need any meat" is said by a lot of Franconians and not only for children the "Kloss mir Sos", a dumpling with gravy, is often a complete meal.
In some regions of Franconia the dumplings are eaten with Sauerkraut as side dish only.
Traditional they are served with roasts of all kind. Especially a "Sonntagsbraten", the lunch on sunday with the whole family, is unimaginable to the Franconians whithout dumplings.
